This easy combo makes a great lunch or light dinner. This easy combo makes a great lunch or light dinner.
Number of Servings: 4

Ingredients

    1 tbsp extra virgin olive oil
    1 cup brown rice, cooked according to package instructions.
    1 can ranch style black beans
    1 can Rotel (diced tomatoes with green chiles)

Directions

Cook rice, using the 1 tbsp olive oil in place of other fat in package directions.

In another large sauce pan, combine black beans with Rotel. Season to taste with chili powder, cumin, etc. Add cooked rice and stir to combine. If desired, garnish with fat free sour cream or a small amount of shredded cheddar cheese.

    This was so good. Never had black beans before, but prepared this way I will be eating them often. I used mild salsa instead of Rotel, and also sprinkled chedder cheese on top. Thanks for the great recipe it was yummy!! - 1/24/11

    I had leftover rice, so I was able to make this VERY quickly! I didn't have any Rotel, so I used salsa. And I also added cheese. It was very good, and now I have three more lunch servings for a fast meal on busy days. - 2/22/15

    TOOK THE RECIPE AND ADAPTED IT TO WHAT I HAD -- BLACK, BEANS, CORN, GREEN/YELLOW PEPPERS, CILANTRO, GARLIC, SAUTEED IT IN A LITTLE EVOO AND IT WAS YUMMY!!!
