TOOK THE RECIPE AND ADAPTED IT TO WHAT I HAD -- BLACK, BEANS, CORN, GREEN/YELLOW PEPPERS, CILANTRO, GARLIC, SAUTEED IT IN A LITTLE EVOO AND IT WAS YUMMY!!! THANKS FOR THE BASIC RECIPE TO GIVE ME THE IDEA. ALSO I RINSE THE CANNED BEANS AND CORN TO GET RID OF SOME OF THE SALT. ADDED LEFTOVER CHIX.
I have tried using packaged black beans and cooking them according to the package in place of canned beans to eliminate the sodium content. Great meal i must say!
Easy, filling, high in fiber and low in fat. All that and it tastes good too!
