Good starter. I omitted the tomato juice, pepper flakes, & dried onion. I increased cilantro to 1/2 c, & added 1 mango, diced, 1 red onion, diced, 1 serrano chile, diced and 4 Tbl lime juice & pinch of salt. I served it all over brown rice. Hubby added salsa to his. Very yummy! Thanks!
great tasting and a full corse meal in it's self (if you use fresh veggies) You already have the protein, now just add a little rice and your done. And , so simple!!!
Yumm-O!! I add fresh onion as well. I also added Tiger sauce to kick it up some. My son put a dollop of Fat Free sour cream in his and raved!!! Very good recipe!
I know this will get the scoldings from the self appointed recipe police for adding calories, but cooking the fresh peppers, onions and garlic (2 Xs as much as called for) in tiny bit of evoo adds lots of flavor, then add beans, cliantro and tomatoe sauce with a splash of red wine vinegar - yummy
dry beans make for a better recipe, canned has way too much sodium..
