Ingredients

Olive oil, 1 tbsp
Onions, raw, 1 small chopped
Garlic, 3 cloves
Carrots, raw, 1 medium peeled and diced
Celery, raw, 2 strip (4" long) Sliced
Beans, white, 2 cup
Curry powder, 1 tbsp
Apples, 2 fresh peeled diced
Veggie Broth, 1 cup
Directions
Prep all the veggies first. Fry the vegies in the Olive oil. Add the beans , veggie broth and curry powder. Cook it a bit more.

This was great:) I used only 1 clove of garlic and 1/2 cup of canned white beans, I omitted the curry (none on hand) dashed chili powder nutmeg and cinnamon. Really made it delicious - 10/9/08

Great variation. This variation of yours is very close to my chili. I'll bet it was good!

Where are the tomatoes you mentioned in the description? Are the apples essential to the recipe? I can't wait to try it out, but was wondering about the tomatoes.... A can of diced tomatoes? That sounds reasonable to me..... - 9/22/08

I need to correct the description. I left them out. Because they wanted to be out. That's why they are missing. It was good with out them. It might be good with them. I liked the apples. They were tasty.

Yeah and I did that out of my own head. Except for the apples which I borrowed from another version. This is essentially tomato-less chili with curry en lieu of chili powder. DH found it spicy. I think next time I might add. 1/2 cup of lowfat yogurt. (en lieu of the heavy cream I really want.)
