Introduction

This filling vegetarian meal is nutritious and easy to make. This filling vegetarian meal is nutritious and easy to make.
Number of Servings: 6

Ingredients

    2 teaspoons olive oil
    6 servings (12 ounces) whole-grain linguine
    1 tablespoon minced garlic
    2 (14.5-ounce) cans diced tomatoes with basil, garlic and oregano (do not drain, no salt added if possible)
    1 (14.5-ounce) can white beans (such as Great Northern or navy)
    1 (10-ounce) package Fresh Express Baby Spinach
    6 tablespoons Romano or Parmesan cheese (grated)

Directions

1. Heat oil in a large nonstick skillet.
2. In a large pot, start boiling water for linguine and get linguine cooked while you continue.
3. Add garlic to the skillet, and saute for a minute or so.
4. Add the tomatoes and beans and bring to a simmer.
5. Add the spinach, cover, reduce heat to low and simmer about 10 minutes. Stir occasionally.
6. Spoon tomato/beans/spinach mixture over linguine and sprinkle with cheese.
This makes 6 servings of 1 cup of pasta, 1 cup of sauce and 1 tablespoon of cheese.

    I make this all the time for a fast meal. However you can save a ton of calories if you don't use pasta or oil. Just cook the spinach and add any type of bean and tomatoes. Excellent choice. - 7/15/09

    This is really good; I used red onion, fresh tomatoes, and greek oregano from my garden, which gave it a little more spice;also used whole wheat linguine-a little too heavy with the beans. Next time I will use a lighter pasta or couscous, rice, etc. Very good flavor, will make again! - 7/14/09

    Ok so I made a few changes I used penne pasta instead and I added some red peppers and it was wonderful the trick is to add the spinach and peppers in at the last minute so the get just a little cooked - 7/11/09

    I swapped out the linguine for a blend of white and brown rices and blended in some Pecorino for the first nights dinner. For leftover I mixed in some seasoned bread crumbs and skillet fried them lilke hashbrowns. - 7/27/09

    This was very good although I do advise you to drain the liquid out of the beans and the tomatoes because this was very soupy. I also made (turkey) italian sausage links on the side for the guys in the house. - 10/4/09

    I loved this so much however next time I will leave out the pasta and use the mixture to make nachos, or stuff bell peppers or maybe top on a chicken breast. The mixture is awesome by itself. I drained each can half way, too soupy if you use all the liquid. Great stuff, huge hit at my house - 1/7/10

    I didn't have all the ingredients on hand so I substituted mushrooms and chopped brocoli for the spinach and tomatoes. I added my own seasonings. It was yummy. I will make it again and maybe even use the correct ingredients. - 10/18/09

    I used the canned no-salt-added tomatoes and added my own Italian seasonings. I also sauteed 8 oz of fresh sliced mushrooms with the garlic. I portioned the pasta & tomato mixture into 6 containers, the extra juice will keep the pasta moist. I thought it was very good. - 9/27/09

    This was excellent, I did change it up a bit, i used macaroni instead of linguine and left off the beans, but added zucchini and mushrooms. The parmesan cheese was a very nice touch and not too many calories over all. I will drain some of the liquid next time though. - 10/5/09

    Very good - husband loved it. Mine was a little watery at the end so I thickened it with a bit of cornstarch. Next time I'll also chop up some mushrooms and fres tomatoes and add that. Some fresh herbs would probably give it a little extra kick too. - 8/20/09

    Tried this earlier this week, got 4 stars from everyone. Easy to make, I used florentine fettuccine instead of linguine to add more color and "no salt added" diced tomatoes (from Del Monte) to cut down on the sodium. There are leftovers but it was filling. We plan on having again. - 10/9/09

    I MADE THIS FOR DINNER SUNDAY. I HAVE A GD THAT DOESN'T EAT VEGGIES. I PUREED A LITTLE OVER A CUP FOR HER AND ADDED THE LEFT OVER TO THE MAIN DISH. I GRATED 3 LG.     Very good! Just did some adjustment on seasoning by adding a bit of peperoncino - to warm up... :-) Also it was necessary to thicken the sauce a bit because it was too fluid.
    Next time I want to try it with fresh tomatoes instead.
