Ingredients

    1/4c. Honey
    1 Tbsp. Dijon Mustard
    1/2 tsp. Ground Ginger
    1/4 tsp. Ground Cinnamon
    1/8 tsp. Nutmeg
    4 Boneless Pork Chops (about 1/2" thick)
    Salt and pepper to taste

Directions

Combine the first five ingredients in a bowl. Salt and pepper the pork chops to your liking. Then heat the skillet to a med-high heat. Cook the pork chops for 2 min. on each side (or until browned). Lower the fire to a med-low heat and pour the ingredients from the bowl into the skillet (with the pork chops). Cook for 10 min.

    This was DELICIOUS! Even got a rave review from a family member who can be kind of picky. I usually have a tendency to overcook pork chops in the skillet, but I followed the directions and the texture was perfect. Substituted extra cinnamon for the nutmeg.     The first words out of my hubby's mouth when eating this was "mmmm" as he smiled and rubbed his belly. All the kids loved it. I doubled the recipe and ran out of regular honey so it ended up being 1/2 regular honey and 1/2 raspberry honey - VERY yummo! We will definitely make this again! Thanks!! - 8/5/09
