Ingredients

    1 small finely chopped apple
    2 T. finely chopped shredded carrots
    2 T. finely chopped celery
    1 t. finely chopped dates and/or raisins
    1 T. natural peanut butter
    1 slice Multi-Grain or Whole Wheat toast

Directions

Combine the first 4 ingredients in a small bowl. Spread peanut butter on toast and top with apple/veggie mixture as an open-face sandwich, and slice in half. Two servings, so enjoy with a friend! Satisfying snack...Colorful topping with a sweet crunchy texture. Healthy protein boost too. Yum!

    To keep the little pieces together, I melted the peanut butter in the microwave and stirred it in. Ate it on a thin bun without making a mess. - 3/11/11

    I tried it with grapes instead of raisins, because although I like grapes, I'm not fond of raisins. It was great!! - 11/24/08

    What a great idea to elevate a peanut butter sandwich. Used a low carb wrap, &PB2 powdered peanut butter, less calorie. Might pull my spiralizer out & spiral veggies & apple or shred them in food processor, and make a ready to use quantity,& hold together better.I will make often as I love P-butter! - 4/30/17
