Ingredients

    2 - 8oz. bonless skinless chicken breast, boiled and chopped
    2 - envelopes taco seasoning
    1 - envelope ranch dressing mix
    2 - 11oz cans shoepeg corn, drained
    1 - 16oz. can black beans, undrained
    1 - 16oz. can kidney beans, undrained
    1 - 16oz. can pinto beans, undrained
    2 - 14oz. cans diced tomatoes, undrained
    1 - 10oz. can rotel tomatoes, undrained
    1 large onion, chopped
    2 cups water

Directions

combine all ingredients in large crock pot and cook on low for 3 - 4 hours. Makes 8 - 2 cup servings

    Ok, I also wondered what shoepeg corn was so I looked it up. It is baiscally a type of sweetcorn available mostly in the South. http://en.wikipedia.org/wiki/Shoepeg_corn
    RO*TEL is a brand of tomatoes that are canned with green chiles. Very tasty and a perfect addition to this type of dish.

    Incredible!
    The most delicious Santa Fe soup I ahve ever had! Tried to save some for lunch the next day and everyone ate it all! Great lower cal version! - 9/14/08
