Introduction
So good the family devoured it in 1 meal!What inspired this soup was the almost empty box of lasagna noodles! I was tired of looking at it.
This is a good recipe to play around with - use what you have on hand.

Ingredients
-
1 to 2 onions, chopped
2 - 4 chicken breasts
1 - 2 cups mixed veggies (frozen, canned or fresh)
4 - 8 oz noodles, depending on taste
seasonings to taste:
salt, 1-2 tsps
pepper, 1 tsp
basil, 1 tbsp
thyme, 1 tsp
turmeric, 1 tbsp
chicken bouillon, 1 tbsp
Cream of Mushroom Soup, 1 large can
Olive Oil, 1 tbsp
Directions
Boil 1 – 2 onions, chopped and 2 to 4 chicken breasts in large pot of water until tender. When chicken is done, (if using chicken with skin and bones), remove skin and bones from chicken. Tear chicken into pieces. Return to pot.
Add 1 to 2 cups veggies (frozen or canned)
Add broken lasagna noodles (pre-cooked or raw) or any noodles on hand. Add seasonings and cream soup (can use chicken, celery or mushroom). Mix well. Stir in 1 tbsp of olive oil, or butter, bacon or sausage grease (whatever you have on hand)
Simmer pot for 2+ hours adding water as necessary. Enjoy!

I made this soup yesterday. It was great, as I added many more seasonings to it then this recipe called for. I did not like that when I went to eat it today all liquid was gone. I am curious to see what happens with the portion that I froze when I am ready for it. - 1/27/09

Hi, Thank you for the great review. My thinking is that you probably used too many noodles and not enough water. This recipe is great to play around with. You can add more water or chicken stock and not change the flavor. When you heat up the frozen portion, add extra water. It should be just right!

I used my homemade veggie broth, cream of chicken soup (I didn't have any mushroom) green beans, onion and pepper mix (frozen), and baby corn. This was great!!!
This was very good and I love how adaptable a recipe it is. I served it with red. fat crescent rolls and salad. This is a keeper! - 2/17/09

Hi, thank you so much for the great review! I love it's adaptability as well. I make it slightly different each time. The only constant for me is the Turmeric - I think it is my "secret" ingredient! :)

Hi, thank you SO much for the great review! Have you tried anything else in my cookbook/recipe box? If you like fish, the Wonderful Whiting is ....well....wonderful and the Tilapia Feast is really good as well. The traditional breakfast casserole which I lightened, is quite good too. Again, thanks
