Introduction

Ingredients

    4 cups cooked brown rice or sushi rice2 tbsp gomashio (see recipe)1 tbsp maple syrup1 tbsp apple cider vinegar1 cup carrot, grated1 cup beets, grated1 small cucumber, sliced like matchsticks1 1/2 cups sprouts (e.g., sunflower, broccoli, spicy)2-3 avocados, sliced3 stalks green onion, chopped8 nori sushi sheetsBraggs (for dipping)Wasabi (for dipping)

Directions

1. In a large bowl, combine the cooked rice, gomashio, maple syrup, and vinegar and place in refrigerator to chill for 10-15 minutes. When rice has chilled, place nori sheet on a sushi mat or cutting board and spread 1/2 cup of the rice mixture over 2/3 of the nori sheet closest to yourself. Add each vegetable, placing it in the middle of the rice mixture. Roll the nori away from you. Dab a little water with your finger to seal up the edges. Slice into two or four pieces.

Use Braggs and wasabi for dipping. Try different sorts of vegetable combinations for variation.

Makes 24 servings.

    Thanks! We love sushi. The seaweed doesn't taste "fishy" and you can add bits of fresh fish, shrimp, crab meat, etc. to the rolls--or even small bits of chicken. - 3/12/11

    you need to include the whole recepie and not say "see recipie" that makes this worthless. It sounds like it would be a good recipe otherwise. I won't save it unless you bring it back with ALL the instructions - 3/12/11

    My teen and pre-teen love sushi also, what a bonus! We use cucumber and tuna, or egg, mayo and lettuce. You need to leave the rolls for a little while, or the nori is too chewy, i've found. - 3/7/09

    I've always been scared of sushi, but this made it easy. Love it. Left out the gomashio. We added oil preserved zucchini and eggplant to one roll. They look like eel and octopus. It was great! - 2/7/09

    you should't refrigerate the rice, but let it cool down while stirring it once every 10 minutes! also, using rice vinnager and sugar\sugar replacement make it better. you can also cut the nori in half, flatten rice on all of it and a little but extra & flip it to get an inside out roll. - 1/6/09

    I love sushi! Making it at home is fun, too. Sushi rice is really sticky but Alton Brown also has a good recipe for cooking it. Raw tuna is good too, and adding hot sauce as well! Sushi is one of the few foods I LOVE that isn't bad for me :) - 1/3/09

    I really don't like the fishy taste of sushi. Does this recipe have a fishy taste? Does the seaweed have a fishy taste? Funny, I do like all kinds of fish. My son likes sushi and I will pass this recipe to him. - 7/7/08

    Actually, I have NEVER made sushi before. I did put it into the search tool bar and found NO recipes on how to make gomashio, I figured it was probably just a tig bit more added sweetness. Anyway, don't be surprised if people are fussy because part of a recipe is missing! - 1/17/08
