Taste just like Girl Scout cookies - seriously!! Ingredients

1 sleeve of Reduced-Fat Ritz crackers, ~40 crackers
1 bag of Wilton Dark Cocoa Mint Flavored Candy Melts (get at a craft store, like Michael's)
Serving size = 2 cookies
Directions
Follow the directions to melt the chocolate (I use the double-boiler method). Place 1 cracker in the chocolate and coat; use a fork to lift it out and place it on waxed paper. Repeat until out of chocolate.
Let the cookies cool...YUM!!

I have made these before. There are complaints about the number of calories, but when you have cravings, it is better to have something to satisfly the cravings before they get out of hand. I would make them. They would take some time, but they would be cheaper than buying them. Thank you. - 12/18/09

I make something similar during the Holidays, but instead of the candy melts, I use almond bark (3 blocks chocolate and 1 block vanilla) and peppermint flavoring to coat them. I'm not sure how that would effect the calorie/fat numbers, but it's a good alternative if you can't find the candy melts. - 12/26/08

I made these and they were yummy. I made them as gifts and wrapped them in florists paper tied with a bow. I think they are a great idea. I put a sprinkling of hazelnuts on every alternate biscuit and they looked great. Maybe not too healthy, but homemade and a lovely gift idea. Thanks Lorelei2 - 12/21/08

Not exactly what I call healthy dessert but they are very excellent and ACTUALLY taste like girl scouts thin mints. They also were so easy to make. I made them for a baby shower and I know no one is gonna believe me they aren't girl scouts, LOL! Loved them just wish there was a healthier version - 11/29/07

With these, at least it's easier to stop after a few, without the compulsion to finish a whole sleeve of cookies! (Thin mints are my weakness, and they come in stacks in my mind. 3 stacks=a pack.
