Ingredients

    1/2 cup margarine (soft)
    1 cup splenda
    2 eggs
    1 cup mashed bananas (around 3)
    2 cups all purpose flour
    1 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt

Directions

Cream Butter ans sugar together. Add eggs. Blend in mashed bananas. Add dry ingredients and mix until moistened.
Place in loaf pan and bake 1 hour at 350 F

    I cut back on the splenda to 3/4 c. I also added some blueberries and toasted walnuts. I replaced the soft margarine with 3 tbs. canola oil and 1/4 c. applesauce. It was very moist and yummy. I will make this again. - 5/3/09

    YUMMY! I did it a bit differently. Used same ingredients, just added raisins, and instead of loaf pan, used a muffin pan. Made 12 muffins, great taste! 30 mins on 350 degrees. Thank you for sharing! - 2/1/09

    I made this last night and it turned out! I didn't have 3 bananas so did it with two...I think 3 would have made it moister. There was no temp. in the recipe but I used 250 degrees. YAY Splenda!!!! low carbs!!!

    Very Good
    The kids loved it and so did my husband and I! I did sub 1/2 cup of sucanat for 1/2 of the Splenda and added some dark chocolate chips. - 5/5/09

    Would try again with half the splenda. Big after taste. Also replaced eggs with eggbeaters. - 2/12/09
