Ingredients

    INGREDIENTS FOR 6 SERVINGS:2-1/4 pounds red snapper or other lean white fish filletsCooking spray3 tablespoons lemon juice1/3 cup dry breadcrumbs1/3 cup chopped green olives1 tablespoon olive oil2 teaspoons dried oregano1 teaspoon bottled minced garlic1/4 teaspoon white pepper1 (2.25-ounce) can chopped ripe olives, drained6 lemon wedges

Directions

INSTRUCTIONS:
Preparation time: 10 minutes Cooking time: 12 minutes

1. Preheat oven to 450 degrees.

2. Arrange fish in a 13 x 9-inch baking dish coated with cooking
spray; sprinkle with lemon juice.

3. Combine the breadcrumbs and the next 6 ingredients (breadcrumbs
through ripe olives); stir until moist. Spread the olive mixture
evenly over fillets, pressing firmly to coat. Bake at 450 degrees for
12 minutes or until fish flakes easily when tested with a fork. Serve
fish with lemon wedges. Yield: 6 servings (serving size: 5 ounces
fish).

    Very tasty and easy to make. I also used talapia fish. It was frozen, so I cooked at the temperature mentioned on the fish package and it came out just fine without having to thaw first. My husband liked it, too. - 5/8/08

    This was delicious, i used cod, but would suggest using a stronger fish like tilapia or catfish. I also used a 50/50 mixture or orange juice and lemon juice (less tangy and slightly sweeter) instead of all lemon juice. Also i only used 1/2 tsp of oregano, 2tsp was a bit much. Delicious!!! - 3/1/08

    Incredible!
    This was an excellent recipe. I put a can of sliced mushrooms in the pan under the fish and it came out perfectly. Hubby, who only likes fresh fish cooked out of doors, really liked it cooked this way! The olive crumb coating was awesome! - 11/24/13

    I liked this a lot but I knew I'd like it because I love green olives and fish. I used catfish and garlic stuffed green olives. I was surprised because my picky 5 year old ate some and my boyfriend who dislikes green olives ate it too. It was more popular then I expected. - 2/28/08

    Excellent recipe, and really fast! We had it with talapia and used a little leftover tapenade in addition to the other ingredients. A great way to use up leftover olives after a party! Will definitely make it again. Great for a dinner party. - 2/27/08
