Ingredients

    2 cups dry regular oatmeal
    2 cups lowfat buttermilk
    2 medium eggs
    2 tablespoons oil
    1/2 cup flour
    2 tablespoons sugar
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    vegetable oil for frying (about 1 tablespoon)

Directions

This is best started the night before, making it a good weekend breakfast. Get out a large bowl. In it combine the oatmeal and buttermilk. Stir well. Cover with plastic wrap and refrigerate overnight. You could just let it sit for an hour or so, but the overnight soak is what give these pancakes their characteristic texture.

The next morning, take the bowl out of the refrigerator. Add the eggs, oil, flour, sugar, baking powder, baking soda and salt. Beat well with a wire whisk. Fry the pancakes on a hot well oiled griddle or skillet. Use about 1/4 cup batter per pancake. When the top side is bubbly and puffed up, and the underside is brown, turn the pancake. Brown the second side and transfer to a plate. Continue until all of the batter is used up. This recipe makes enough to serve about 8 people pretty well. Add fresh fruit, margarine, Pancake Syrup and milk for a good breakfast.

    Unfortunately, I didn't care for these pancakes. Next time I'll grind the oats in the food processor. Add more salt. As a note about making pancakes, you don't want to over mix the ingredients. You want to mix the dry and wet until just combined. - 9/7/09

    instead of making it the night before, use a Bullet blender or similair blender for the oatmeal, within seconds you can turn oatmeal into a flour type consistency. also add a little cinniman to step the recipe up just a lttle better. also mix the batter in a blender then pour onto cooking surface - 3/8/09

    Very good,I did grind the oatmeal in the vita-mixer for a smoother texture.They passed the DH test so they are a keeper. - 8/11/10

    I thought these were excellent. I added 1 tsp of vanilla, just to boost the flavour a bit. I made extra and froze them, they reheated really well in the toaster - better than traditional pancakes actually. - 2/26/10

    This is how I'll be making my pancakes from now on! They were bland so I added 3T sugar and 1 packet of vanilla sugar, a bit of rum extract, 1 tsp cinnamon and replaced the flour with whole wheat flour and omitted the oil. Very filling :D. Made 29 pancakes for 47 cals each - 4/19/09
