Ingredients

    2 cups all-purpose flour
    2 cup whole wheat flour
    1 teaspoon baking soda
    4 teaspoons baking powder
    1 tsp salt
    1 Tbsp pumpkin pie spice
    1 cup granulated sugar
    1/2 cup brown sugar
    1/4 cup olive oil
    4 eggs, lightly beaten
    1 cup lowfat (2%) milk
    1 (15-ounce) can pumpkin
    2 ripe bananas, mashed

Directions

Preheat oven to 350
Combine flour and next 4 ingredients (through pumpkin pie spice) in a large bowl; make a well in center of mixture. Combine sugar and all wet ingredients in a medium bowl; stir with a whisk until smooth. Add to flour mixture, stirring just until moist.
Spoon batter into 2 (9 x 5-inch) loaf pans coated with cooking spray. Bake at 350 for 1 hour or until a wooden pick inserted in center comes out clean. Cool loaves in pans 10 minutes on a wire rack; remove from pans. Cool loaves completely.
Yield: 2 loaves, 16 slices per loaf (serving size: 1 slice)

    Very good! I made a few changes and I am glad I did- I used 2 eggs, 2 egg whites, oat flour and cut the white sugar in half. Also used skim milk and added more spices. WIth the changes it still is about 100 cals a serving. Thanks for the great recipe! - 2/12/10

    I went with egg beaters and the Splenda white and brown sugars. Since the comments indicated that it came out a little dry also added a single serving cup of unsweetened applesauce...and it came out great! - 10/16/10

    The nutrition info was calculated with Splenda, not granulated sugar, molasses instead of brown sugar, and egg beaters instead of eggs. That changes the nutrition profile quite a bit. This recipe is more calories than posted. Made as posted (with sugars and eggs) the bread tastes good but is dry. - 4/20/09

    This is a great recipe. I did cut the sugar and added an extra banana. I used one egg and three egg whites. This will be a favorite of my DH I did add raisins for him. Thanks Pat inMaine. GREAT FIND!! - 3/29/14

    I used less sugar and substituted applesauce for the oil. I also made it as muffins. I got 24 muffins with 152 cals and 1.2 fat.
    *Remember: an easy way to reduce the fat in bread recipe's is to substitute applesauce for the oil!!

    Love this recipe, however, made exactly with these ingredients in these amounts, there are 131 calories per serving based on 32 servings. Fat is 2.8 grams and sugars are 12.6 grams, still a great food "bargain" for a snack or part of a breakfast. I did not find it to be dry at all. - 6/16/11

    I made it a bit different but this is a great and easy recipe. I used half AP flour and half almond flour, used coconut sugar (about 2/3 called for), added chopped pecans and chopped dried cranberries and actually halved it and it came out great. Will for sure make this again. - 5/20/21

    Absolutely delicious!!! Two of my favorites, pumpkin and banana! Changes: used Organic Pure FL Cane Sugar only, Applesauce instead of oil, added a teaspoon extra of pumpkin spice and added a few chocolate chips! Made cupcakes - 24 and a tiny loaf, so moist and tasteful love it!! Definitely making - 4/16/20

    Delicious. Made some even healthier changes. Took out the oil and the milk and granulated sugar. Added 1 cup of unsweetened Apple sauce, added extra 3/4 cup brown sugar, 1extra banana and used fresh cooked pumpkin. Baked in small muffin sizes. Added three chocolate chips to tops of some for kids. - 12/31/14

    This is very good but a bit dry for me; I used skim milk instead of 2% so maybe that's why! I made muffins and baked them for about 25 minutes. They're good warm with pumpkin butter, light cream cheese or light butter! :) My coworkers loved them. - 11/25/08
