Ingredients

    1 box Jiffy Corn Muffin Mix
    1 Trader Joe's Cage Free Organic Brown Egg
    1/3 cup Orange Juice
    30 grams Orange Flavored Cranberries (Trader's Joes)


Directions

* Preheat oven to 400°.

* Use paper baking cups to avoid adding extra calories by using oil to grease the pan.

* Blend corn muffin mix with water and orange juice. Add cranberries and continue to blend. Batter will be slightly lumpy. (For maximum crown on muffins let batter rest 3 or 4 minutes).

* Fill muffin cups half full. (I use a mini ice cream scoup to make sure I get at least 2 cranberries in each muffin. It's best to go out of your way to make just 6 so you'll have a more accurate measure of the calorie count for each muffin.)

* Bake 15 to 20 minutes or until golden brown.

Note: You can use any large brown egg or any type of cranberries or orange juice. The nutritional difference will be minimal.

Yields 6 to 8 muffins depending on the size of each muffin.

    I recalculated this recipe, and it turns out to be 180 calories per muffin. I think you may need to adjust your nutrition facts. They are very good though.

    These are super but watch the calorie count. I checked the box of Jiffy corn mix and to make just just 6 plain muffins each muffin had 150 calories. but they are yummy. - 1/22/09
