Introduction

This is a staple in our house during cold weather. I adapted this from a local resteraunt. This is a staple in our house during cold weather. I adapted this from a local resteraunt.
Number of Servings: 8

Ingredients

    6 cups 99% Fat Free Chicken Broth
    2 boneless skinless chicken breasts (that's 4 breast halves)
    3 cans 98% Fat Fress condensed Cream of Chicken Soup, undiluted.
    4 Tablepsoons Lemon Juice
    1 Tablespoon Garlic Powder
    1 cup white long grain rice
    2 cups water

Directions

Place chicken breasts and 1 Tablespoon of lemon juice in a covered oven dish, add enough water to just cover. Cover and bake at 350 for 30--45 minutes or until done.

Meanwhile, in dutch oven, combine chicken broth, soup, 3 Tablespoons lemon juice, garlic, rice and 2 cups water. Bring to a boil, then reduce to a strong simmer, stirring as needed.

When chicken is done, cut meat into small pieces, and add with cooking juices to soup. Stir and simmer about 5 more minutes.

Makes about 8 2 cup servings.

    This could be lower in sodium by using either or a combination of Herb Ox SODIUM FREE broth boullions or 50% LESS lower sodium broth, also use the LOWER sodium 98% Fat Free condensed Cream of Chicken soup. It does look really good, will try. - 4/1/09

    I thought tis a great recipe. I used additional vegetables peas, carrots, mushrooms (canned) and Canned chickenbreast from Costco along with its broth as part of the broth. Also I usually fix a lot of rice & freeze it; so, I just used some of it for the rice & did not add water unless little neede - 2/11/17

    I made a few subs- used one can each of cream of celery, cream of chicken, cream of mushroom soups ; subbed with 1 Tbs minced garlic instead of powder, subbed with one can of great value white meat chicken chunks, sub with juice of one lime instead of lemon. Very tasty,easy, quick. will make again. - 9/11/15

    This is an awesome recipe. This is perfect for when I get home after work and want to prepare a home cooked healthy meal for my family quickly. I cheated alittle and added chicken breast from a rotissiere chicken, also added can of sliced mushrooms, wild rice and a carrots, It was DELICIOUS! - 12/26/10

    I'm glad yu liked it. I had not thought of rostiserie chicken. Many times I will cook the chicken breast the night before, then throw it together on the night I want it. In fact, guess what I'm planning on tonight?

    I made this last night for my family and everyone loved it. It is a bit salty but very satisfying. I added a little bit more rice, some parsley and some scallions to make it a bit more hearty. - 1/5/10

    It was nice and easy ans tasted great! I added 1 lg onion, celery and carrots to to soup. I also put in some fresh thyme while the soup was simmering. I subbed in brown rice instead of the white. Was a big hit! - 10/19/09

    This was so easy to make and DELICIOUS! I did double the chicken and the rice to make it a bit more hearty. I also made it with a long grain wild rice which is my favorite. I definitely will be making this again. - 6/8/09
