Introduction

With zucchini so plentiful in the summer, and friends sharing their harvest, I find this a very easy and enjoyable dish. With zucchini so plentiful in the summer, and friends sharing their harvest, I find this a very easy and enjoyable dish.
Number of Servings: 6

Ingredients

    3 cups grated uncooked zucchini, squeezed to drain moisture
    1 cup Bisquick
    1 large onion, chopped
    1/2 cup grated Parmesan cheese, (I use fresh grated)
    1 tablespoon fresh parsley, minced
    1/2 teaspoon salt
    1/2 teaspoon oregano
    1/2 teaspoon garlic powder
    dash pepper
    1/2 cup olive oil
    4 eggs, slightly beaten

Directions

Mix and beat all ingredients, except zucchini. Fold in zucchini. Pour into a greased 10" pie plate or quiche pan. Bake in 350F oven until brown and knife comes out clean for 35 to 40 minutes.

You may add cheddar cheese and sprinkle with with a little fresh oregano or fresh basil and salt and pepper. (Optional) ENJOY!

    I added small cherry tomatoes. Place the cherry tomatoes on a baking tray sprinle with olive oil (salt and pepper optional) bake until the tomatoes start to soften and skin starts to peel then remove form oven and add to quiche mixture before baking in the oven, delicious! - 3/23/11

    This was incredibly delicious! Next time I think I'll brown the onions with some fresh garlic first and omit the garlic powder. I'll also throw in some crushed red pepper to give it a kick. Or I could serve it with salsa! It's delicious either way. - 8/18/10
