Introduction

This slimmed down version of your favorite dip is easy to make--and it's light enough for you to load up on it! This slimmed down version of your favorite dip is easy to make--and it's light enough for you to load up on it!

Ingredients

    10 ounces Fresh Express Baby Spinach, steamed
    1 bag (14 ounces) frozen artichokes
    2 (8 ounce) packages light cream cheese
    1 T lemon juice
    1 small onion, minced
    3 cloves garlic, minced
    1/3 c parmesan cheese
    1/2 t red-pepper flakes
    1/2 t oregano
    salt, pepper to taste
    nonstick cooking spray
    (Optional garnishes: minced red bell pepper or chopped tomatoes)

Tips

You can make this dip in a slow cooker if desired. Saute the onions and garlic, then transfer to the slow cooker and continue with the recipe. Heat on low for four hours, stirring often and thinning with skim milk if necessary.

Fat-free cream cheese lacks the satisfying creaminess you crave in this recipe. Do not use it.
This can also become a decadent pasta sauce. (As a sauce, it makes 10 servings. You might need to thin it a bit with cooking water from the pasta.)
If you don't like artichokes, leave them out and add another bag of spinach.


Directions

Spray a medium pot with nonstick cooking spray. Add garlic and onions and cook over medium heat until they're translucent, about five minutes.
Put spinach in food processor and pulse a few times to chop. Add artichokes and pulse a few more times. The mixture should be chunky. Add spinach and artichokes to pot, along with cream cheese, oregano, red pepper and lemon juice. Heat until bubbly, then add Parmesan cheese and salt and pepper to taste. Serve immediately.
Garnish with chopped red bell pepper or chopped tomatoes. (Calories not included.)
Makes 20 servings of about 2 Tablespoons.
Serve with vegetables or baked chips.

*Don't worry about getting the spinach completely dry. The extra moisture will help thin the dip.

    This was fabulous! I saw that someone used a crockpot, so that is what I did. I didn't saute' onion or garlic - just tossed all ingredients into the crockpot. High for 1 hour and low for 2. Next time I'll add some water chestnuts for crunch. Used 2 sm jars artichokes drained. yummy! - 1/6/09

    Great! Made with a can of artichoke hearts (no frozen available), 1 block FF and 1 block light cream cheese, added 2 tbs light sour cream to thin. Eating right now with baby carrots, and hubby is eating with tortilla chips. We are both having seconds! - 2/8/09

    Very good. I made it in a slow cooker with fresh spinach. I also only made half a batch and added a 1/4 cup of fat free sour cream to help it get creamier. Great flavor! This will definitely be a dip I use again! - 2/7/10

    I have made this for years. Mine as fewer calories. I always use fat free cream cheese or a mix of fat free cream cheese & fat free Ricotta. I also use less parmesan and mix it with
    some shredded low fat sharp cheddar. Try it, you might like it.

    I cooked this for some friends one night and they couldn't stop eating it! The only problem is that I wasn't sure of the measurements used in the recipe, so I used one can of artichoke hearts, 2 4 oz cream cheeses. I didn't use the red pepper and it was still good.     I just made this and it was very good! Only problem, is that it's supposed to be healthy but I couldn't only eat 2 tablespoons. I had probably four or five servings (about 1/2 cup or so) and it was like almost 400 calories. Next time I will try making it with FF Cream Cheese and more veggies. =) - 1/28/10

    This is delicious! I added a bit of cumin and some jalapenos for kick. Then we put one tablespoon of the dip with a tablespoon of black beans, a couple slices of tomato and cucumber and put it all in a small, warm whole wheat tortilla.     This was so delicious!! My sister-in-law mentioned a couple weeks ago how much she loves spinach-artichoke dip, so I surprised her last night.     This was a hit! It makes lots and tastes delicious. I would suggest getting canned artichoke because we had trouble finding any frozen. I used a cheese blend with parmesan in it and served it with some paprika on top. I would definitely make it again - next time I'll use the slow cooker suggestion! - 8/1/10

    This was really good but it definitely does not need two packages of cream cheese. I used one package w canned, drained artichokes and put the frozen chopped spinach into the pot without thawing. This was a great consistency and I even reheated it (covered with foil) in the oven (400deg for 15min) - 8/16/12

    This is a very good low-fat spinach dip recipe. The extra spices, garlic, and red pepper definitely hide the taste of non-fat cream cheese and low fat cream cheese. I also added a little leek soup dry mix and small can of green chiles. - 12/12/09

    It is pretty good, taste just like the kind Tostitos makes. It's missing something but I just don't know what. I used a can of artichokes and a 42 oz bag of spinach and 1/3 fat cream cheese. I think it's pretty ok. Would make again. - 1/13/09

    Awesome tasting dip. I like to use fresh ingredients and left out the parmesan cheese but went with the chopped red pepper. I also used less cream cheese it still tasted good. In my opinion it tastes best after the dip cools in the fridge for a while. I will never buy the canned stuff again, thanks. - 10/14/12

    This is so easy and tasty! I made this for a house warming party, served with fresh veggies and bruschetta. I heated it in a pot until it was bubbly, and then baked it for 5-10min for crispy edges. Everyone loved it! Now I'm always asked to bring this to family gatherings. :) - 12/15/11

    Made this for a Thanksgiving appetizer. It was a hit and so yummy! I used low fat cream cheese and low fat parmesan cheese and it still tasted great. To make ahead, I cooked onion/garlic and then put all ingredients in the food processor. All I had to do was heat it up when ready. - 11/29/09
