Introduction

Ingredients

10 ounces Fresh Express Baby Spinach, steamed
1 bag (14 ounces) frozen artichokes
2 (8 ounce) packages light cream cheese
1 T lemon juice
1 small onion, minced
3 cloves garlic, minced
1/3 c parmesan cheese
1/2 t red-pepper flakes
1/2 t oregano
salt, pepper to taste
nonstick cooking spray
(Optional garnishes: minced red bell pepper or chopped tomatoes)
Tips
You can make this dip in a slow cooker if desired. Saute the onions and garlic, then transfer to the slow cooker and continue with the recipe. Heat on low for four hours, stirring often and thinning with skim milk if necessary.
Fat-free cream cheese lacks the satisfying creaminess you crave in this recipe. Do not use it.
This can also become a decadent pasta sauce. (As a sauce, it makes 10 servings. You might need to thin it a bit with cooking water from the pasta.)
If you don't like artichokes, leave them out and add another bag of spinach.
Directions
Spray a medium pot with nonstick cooking spray. Add garlic and onions and cook over medium heat until they're translucent, about five minutes.
Put spinach in food processor and pulse a few times to chop. Add artichokes and pulse a few more times. The mixture should be chunky. Add spinach and artichokes to pot, along with cream cheese, oregano, red pepper and lemon juice. Heat until bubbly, then add Parmesan cheese and salt and pepper to taste. Serve immediately.
Garnish with chopped red bell pepper or chopped tomatoes. (Calories not included.)
Makes 20 servings of about 2 Tablespoons.
Serve with vegetables or baked chips.
*Don't worry about getting the spinach completely dry. The extra moisture will help thin the dip.

I just made this and it was very good! Only problem, is that it's supposed to be healthy but I couldn't only eat 2 tablespoons. I had probably four or five servings (about 1/2 cup or so) and it was like almost 400 calories. Next time I will try making it with FF Cream Cheese and more veggies. =) - 1/28/10

This was so delicious!! My sister-in-law mentioned a couple weeks ago how much she loves spinach-artichoke dip, so I surprised her last night. I only replaced one item, as my neighborhood market doesn't sell frozen artichokes so instead I bought 2 jars of marinated artichokes and drained the juice. - 12/21/08

This was a hit! It makes lots and tastes delicious. I would suggest getting canned artichoke because we had trouble finding any frozen. I used a cheese blend with parmesan in it and served it with some paprika on top. I would definitely make it again - next time I'll use the slow cooker suggestion! - 8/1/10

This was really good but it definitely does not need two packages of cream cheese. I used one package w canned, drained artichokes and put the frozen chopped spinach into the pot without thawing. This was a great consistency and I even reheated it (covered with foil) in the oven (400deg for 15min) - 8/16/12

Awesome tasting dip. I like to use fresh ingredients and left out the parmesan cheese but went with the chopped red pepper. I also used less cream cheese it still tasted good. In my opinion it tastes best after the dip cools in the fridge for a while. I will never buy the canned stuff again, thanks. - 10/14/12
