Ingredients

1 Cup yellow cornmeal
1 Cup stone ground cornmeal
1 (9oz.) package yellow cake mix
2 t. baking powder
1 t. salt
1/8 t. cayenne pepper
1/2 C milk
1/2 C buttermilk
1/4 C vegetable oil
2 eggs, beaten
2 T light brown sugar
2 T honey
1 T miracle whip light
Directions
Combine cornmeals, cake mix, baking powder, salt, and cayenne in a bowl, set aside. Combine milk, buttermilk, oil, eggs, brown sugar and honey in a bowl and mix well. Add to the cornmeal mixture and mix gently - there should be no lumps, but do not overmix. Fold in the miracle whip.
Let rest, covered, in the refrigerator for 30 minutes or up to overnight.
Preheat the oven to 400. Spoon the cold batter into a greased muffin tin. Bake for 25-30 minutes or until a cake tester comes out clean and the top is golden brown.

This was a total waste of my time and money. This surely does not taste like Famous Dave muffins...NOT AT ALL. Like someone else said it came out super dry and crumbly and hard. Looked nothing like the actual muffins and tasted awful. All went in the trash. Don't waste your money and time. - 11/18/11

I like cornbread, but my boyfriend LOVES cornbread. I was told about Famous Dave's cornbread by a coworker who says it is the best cornbread he has ever had. I decided to look up the recipe and try it. It was fantastic and a huge hit. I left out the Miracle Whip but added in a can of cream corn YUM! - 9/28/10
