Ingredients

    4 pork chops (boneless or bone-in)
    1 cup brown rice
    1 can beef broth
    1 can beef consomme
    2 tablespoons butter
    salt
    pepper

Directions

In casserole dish, mix rice, beef broth, beef consomme, and butter. Salt and pepper pork chops as desired and lay on top of rice. Bake at 350 for 45-50 minutes.

    This tasted great! I used long grain brown rice and it was not cooked after the 50 minutes in the oven. If you simmer the rice on the stove for about 15 minutes first, then bake it should be perfect. And, I don't think the nutritional value is correct... I calculated about 309 calories per serving - 4/5/10

    This was so yummy! The chops were super tender and moist! I precooked the rice like people suggested. I ended up with a lot of liquid, so I think maybe my can of beef broth was bigger than it should have been....will try cutting that down so the rice doesn't drown! - 6/4/09

    Enjoyed this dish. Precooked the rice and it came out perfect. Used a packet of ramen seasoning instead of broth and consomme. Added a layer of veggies on top, Cut into 6 portions for mini meals. Big hit in this house. - 5/28/09

    I made this for supper last night. We really liked the pork chops and the flavor of the rice. I cooked it for over an hour and the rice still wasn't completely done. Will plan on cooking 2 hrs the next time I make it. - 5/16/09

    I normally bake pork chops with mustard on top, but the kids liked this much better. I added a little 0-calorie cajun spice mix on top for extra flavor. - 4/4/09
