Introduction

Eggplant is perfect for the grill. Just a little olive oil, salt and pepper. Yummy!!! My favorite use of grilled eggplant is on a sandwhich. A grilled veggie sandwhich is about as good as it gets!! Number of Servings: 4

Ingredients

    1 medium sized eggplant - sliced into 1/2 inch thick slices


    2 tsp olive oil


    Salt and pepper to taste

Directions

Makes approximately 4 - 4oz. servings



Preheat your grill to med-high heat.....about 375 degrees.


Take sliced eggplant and lightly drizzle 1 tsp of olive oil over all the slices. Rub in with your hands.


**Remember eggplant is like a sponge so rub with your hands as soon as possible to evenly coat it. You could also use a pastry brush too.**

Lightly season and then repeat on the other side.


Place on the grill for about 4-5 on each side.

    I made eggplant almost like this yesterday. It was SO delicious! Mine was just a bit different. I used baby eggplant and I am SO GLAD I did - I hate the seeds in big eggplant. I added minced garlic & put in a bag w/ eggplant, salt, and pepper with oil. Shook, grilled 3 or 4 min each side - Voila! - 6/16/09

    Very Good
    Used Basil flavored oil, garlic and balsamic. Don't cut them too thick. Served them with WW pasta with Prego Sauce sprinkled with Parm. Cheese. Very good! - 8/25/11

    Not too shabby & pretty darn easy. I did as another suggested & mixed some balsamic vinegar with the EVOO before coating eggplant then sprinkled on some garlic powder after. - 7/20/11

    I wasn't able to grill mine, but I pan-fried it for the same length of time on each side. I added garlic salt, pepper and sprinkled parmasean cheese on top after I flipped it. The flavour was really good, but it was a bit too mushy for my likings. - 8/27/09

    This was so simple, and soo good! I also added some minced garlic to the EVOO and pepper. I added it to a turkey burger on an Arnold's Sandwich Thin...YUM!! - 8/11/09
