Introduction

A spicy way to drink your veggies! It's a bit like a virgin bloody mary. The color leaves much to be desired, but it's very satisfying otherwise! Ingredients

    1 14.5 oz can of diced tomatoes with green chiles
    1 large bunch of fresh cilantro (about 1 C)
    2 medium garlic cloves, peeled
    3 T lime juice
    1 medium-large sweet red pepper, deseeded
    1 large cucumber, peeled
    1 t ground cumin
    water

Directions

Makes 5 1-cup (8 oz) servings. Try freezing any extra in single-serving sizes.

If necessary, chop ingredients into pieces small enough for your blender to handle. Blend together all ingredients until smooth. Add enough water to bring the total volume to 5 cups. Serve over ice.

For a less spicy version, or a lower sodium version, use a different kind of diced tomatoes. I used Muir Glen Fire Roasted Diced Tomatoes with Green Chiles.
