Introduction
A banana bread that is low in fat, low in calories, but tastes great too!! A banana bread that is low in fat, low in calories, but tastes great too!!Number of Servings: 12
Ingredients
-
1/4 cup low fat margarine
2 tbsp sugar
2 tbsp honey
2 tbsp of Splenda (or 2-3 packets of sweetener)
2 egg whites
1/4 cup of water
1 cup of mashed (or pureed) very ripe bananas
1,1/2 cups of whole-wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp milk
Directions
Preheat oven to 350, Cream together sugar honey ,sweetener and margarine, add egg whites and water, mix in bananas. In separate bowl sift together flour, salt, baking soda and baking powder. Mix together dry with wet. add milk blend well together. Spray loaf pan with no cal no fat cooking spray, pour mixture in pan. Bake in oven for 60 min or until tooth pick inserted into center of loaf comes out dry.

Loved this! I've been meaning to make banana bread for a while- I think I was unconsciously waiting for this recipe! I also 1/2d the margarine (actually used butter) and added 1/8 c of applesauce, plus 1/2 c of milk chocolate chips. Also, I put it into 2 slightly smaller loaf pans for 24 servings - 1/9/08

I loved it. I, too, doctored up the basic recipe. I had 5 large very ripe bananas and used them all. I used 1 tsp cinnamon, 'the pink sugar substitute' and about 1/4 cup choc chips, baked in muffin pan; made 12 nice sized muffins which were wonderful. The whole wheat flour added a nice crunch - 7/23/10

I just made this for breakfast. I will be saving this recipe!! I also used 1/4 cup of unsweetened applesauce instead of margarine (I always use it as a substitute in baking) and I added cinnamon and vanilla and also shredded zucchini as I have a ton to use up from my garden. Seriously, this is a marvelous recipe!! I was skeptical about the muffins being 'light and fluffy'. Tis all true! I've just eaten 2 fresh out of oven. I followed recipe-added a few walnuts--yummy. Also remembered to add a few choc chips to a small loaf; probably will leave them out next time. - 8/14/09
