Introduction

A banana bread that is low in fat, low in calories, but tastes great too!! A banana bread that is low in fat, low in calories, but tastes great too!!
Number of Servings: 12

Ingredients

    1/4 cup low fat margarine
    2 tbsp sugar
    2 tbsp honey
    2 tbsp of Splenda (or 2-3 packets of sweetener)
    2 egg whites
    1/4 cup of water
    1 cup of mashed (or pureed) very ripe bananas
    1,1/2 cups of whole-wheat flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    2 tbsp milk

Directions

Preheat oven to 350, Cream together sugar honey ,sweetener and margarine, add egg whites and water, mix in bananas. In separate bowl sift together flour, salt, baking soda and baking powder. Mix together dry with wet. add milk blend well together. Spray loaf pan with no cal no fat cooking spray, pour mixture in pan. Bake in oven for 60 min or until tooth pick inserted into center of loaf comes out dry.

    i made these with unsweetened applesauce instead of marjarine and added a 1/2 cup of chopped walnuts and 2 oz of chocolate chips and a couple tsps of cinnamon . i ended up with 14 muffins 125 calories each and really yummy! - 4/16/09

    I never would have believed this was made with all whole wheat flour- it came out so fluffy and moist! I made a few ajdustments: I halved the margarine and added 1/8 cup applesauce, 1 tsp vanilla, 2 tsp cinnamon, and a handful of rolled oats. I will definitely be making this again. - 1/3/08

    I love these. I changed margerine to applesauce. I also added the vanilla and cinnamon like others. I also added choc chips (1.5 oz.) It only changed to 115 cal and 1.9 g fat. I will definatley make these again. - 3/28/08

    This is a great banana bread. My family loved it too. The only thing was that I put it in for an hour and took it out after 50 minutes and it was already done, a little overcooked. So I would recommend putting it in 40-45 minutes and checking it. Still delicious though! - 8/12/07

    Loved this! I've been meaning to make banana bread for a while- I think I was unconsciously waiting for this recipe! I also 1/2d the margarine (actually used butter) and added 1/8 c of applesauce, plus 1/2 c of milk chocolate chips. Also, I put it into 2 slightly smaller loaf pans for 24 servings - 1/9/08

    I have a hard time slicing correctly. (There are only two slices in any loaf of bread-the left side and the right side).

    I made it!! So good! I used only half the butter and added 1/4 C. Pumkin Puree. I didn't have honey. It definatley would better with the honey. Next time I will follow the suggestions of adding cinnamon.

    I really liked it as did my wife & I really am not a person who bakes. Would make it again. I included everything as suggested in the recipe but in end did include whole egg. Only baked for 40 minutes and it was done - 12/19/07

    I checked it at 30 minutes and it was already a little burnt. It's also dry. It will probably taste better with marg. or butter which is going to make it unhealthy. Next time I'll cook it for less time and add some cinnamon for a little more flavor. - 12/2/07

    I made this exactly as written with no additions or subtractions. It didn't do much to satisfy my sweet craving. It needed more sugar and/or honey. It also needed more banana to counteract the drying effect of using all whole wheat flour. - 4/4/13

    This recipe is fantastic. My wife didn't have a bread pan so she put the batter into a 12-muffin muffin pan. It is convenient that the recipe makes 12 servings. However it makes it too easy to just grab another. They are so good they are hard to resist. Thanks for the recipe! - 10/21/12

    Pretty good. I don't have a sifter, so that's probably why mine didn't turn out as light as the others. I'll definitely have to get one of those. It was done after 45-50 min. I used applesauce instead of butter, but next time I'll probably use extra banana instead. Good with pecans. - 10/7/10

    I loved it. I, too, doctored up the basic recipe. I had 5 large very ripe bananas and used them all. I used 1 tsp cinnamon, 'the pink sugar substitute' and about 1/4 cup choc chips, baked in muffin pan; made 12 nice sized muffins which were wonderful. The whole wheat flour added a nice crunch - 7/23/10

    I just made this for breakfast. I will be saving this recipe!! I also used 1/4 cup of unsweetened applesauce instead of margarine (I always use it as a substitute in baking) and I added cinnamon and vanilla and also shredded zucchini as I have a ton to use up from my garden.     I made this using Splenda and Splenda brown sugar blend and omitted the sugar and honey since I am diabetic and wanted to avoid the extra sugar. I added an extra tablespoon of water. They came out great! - 3/27/10

    This recipie makes awesome banana muffins!

    I didn't have honey or sugar so I used Splenda instead and I didnt have milk so I used water and the still turned out fantastic! I ended up with 6 muffins.

    Seriously, this is a marvelous recipe!! I was skeptical about the muffins being 'light and fluffy'. Tis all true! I've just eaten 2 fresh out of oven.     ya know this is wonderful.
    If you actually use I can't believe it's not butter spray you could even save some more calories and such. For this spray is liquid, tastes great and has no fat or calories in it. I can't use butter or margarine anymore. :-)
