Ingredients

    Mozzarella Cheese, part skim milk, 4 oz
    Chicken Breast, 2lbs Cut into tender-size strips
    I Can't Believe It's Not Butter, Light Spread (Soft), 2 Tbsp
    Campbell's Cream of Chicken Soup (98% fat free), 0.5 cup
    Stove Top Dry mix, 4 serving (2 cups dry)

Directions

Lay chicken strips in casserole pan.
Pour cream of chicken over top.
Put shredded cheese on top of that.
Prepare stuffing as directed with light margarine. Crumble it on top of all that.

Bake at 350 covered with foil. Depending on type of pan and thickness of chicken strips, it might take longer or shorter amounts of time, but mine takes about 45 minutes. I test it the chicken with a knife. When chicken is done remove cover and bake for 2-5 minutes. Don't worry about it drying out. It would be nearly impossible to do!
Serve with your favorite steamed veggies! The additional liquid in the pan is delicious on veggies.

Feel free to experiment with the fat free "cream of" soups and low fat cheeses. You can make an endless amount of combinations, and keep it fresh, but still comforting and low calorie.
