Introduction

Ingredients

    1 cup raw rice
    16 oz jar salsa ( I use Green Mountain Griingo)
    15 oz can no salt added black beans
    16 oz frozen corn
    14.5 oz can no added salt diced tomatoes
    1 tsp ground cumin
    12 oz water

Directions

Add all ingredients to a 13 x 9 baking dish mix well. Cover tightly with foil and bake at 375 for about 1.25 hours or until rice is cooked and mixture thickens.

    DELICIOUS! This is the first healthy recipe my bf has loved! I added cayanne pepper to ours, but otherwise exactly as stated. Brown rice did up the cooking time by 30 mins - 4/21/11

    I made this for supper tonight and it was wonderful. I added 3 large cloves of garlic, left out the corn, added 1 lb of lean ground beef, and before adding the brown rice I put it in the microwave with 1 1/4 cup of water for 10 minutes to par boil it. It was yummy, and very filling!! - 2/16/10

    I took the idea of this recipe and some of the comments and altered it to my own tastes delicious. I put a can of beans, can corn niblets, frozen peas, 1 cup salsa, sauted onions, carrots and celery, a cup rice (half cooked), a low sodium taco seasoning package. Mixed it up and baked it until heated - 6/6/09

    Excellent! I added a little cheddar on top when serving. I also used chicken broth instead of water and I think it added a little extra flavor. Will definitely make again! - 9/4/12

    This was great! made a couple tweaks according to what i had on hand. One comment for anyone using brown rice - it will take a bit longer to cook (took 1 3/4 hrs for me, but i had to increase all qtys as well because i had a 19oz can of blk beans). But great recipe and very easy! - 1/26/10

    Super easy and tasty. I used brown rice and it did add about 30 minutes to the cook time. A little too "tomatoey" for me, might leave out the can of tomatoes next time and add a little more water. - 11/2/14

    Used brown rice, garlic and a bit more seasoning and just a touch of salt in the dish. Took 1:50 to cook but it is amazing!!

    I didn't have corn on hand tonight. My husband likes this as is. Our daughters think some garlic would have been good on it. I used white rice. Next time I'll try brown (with the microwave pre-cook hint) and add some garlic. Easy and tasty! - 3/14/11

    Instead of salsa, I used a can of hot rotel. I also made brown rice on the side (I'm low carb) and no corn (don't eat starchy veggies). However, this is a great base recipe for black beans. Thanks for sharing. - 11/8/10

    Loved this vegan recipe which is high in protein and low in calories. I added onions, a can of chopped chilies, and a little chili powder. Will definitely make it again and will try different types of beans for variety. - 5/8/09

    This Rice is so easy. I put foil in the bottom of the psn (no clean up) and I added Rotel for my tomatoes. Had a party tonight an my guest said it was the best they ever had. The restaurants make it to dry. Great job. - 3/3/09
