This is a simple recipe that tastes amazing, it is also better than any traditional chicken Parmesan I had tried. When you consider it's lower in fat, takes about 10 minutes to put together, it's no wonder why this is my new favorite recipe. Ingredients

    2 tbsp olive oil
    2 cloves garlic
    red pepper to taste (optional)
    6 boneless chicken breasts
    2 cups marinara sauce
    1/4 cup chopped basil
    8 oz. mozzarella cheese, shredded
    4 oz. Parmesan cheese, grated
    1 (5 oz) package garlic croutons, crushed

Directions

In a 9x13 casserole dish add olive oil, garlic and red pepper (optional).
Place chicken on top and cover with sauce and basil. Add half the cheese and top with crushed croutons. Add remaining cheese.
Place in oven preheated to 350F and bake for 35 to 45 minutes or until cheese is bubbling and golden.
Makes about 12 servings with 3 oz of chicken.

    Absolutely awesome. EVERYONE loved this. I made it exactly as written except added more of each ingredient because my family is large. We will definitely be making this often. Actually I couldn't find plain garlic croutons so I ended up with cheese-garlic croutons. Try this recipe, you'll love it! - 2/7/10

    This was awesome, and easy! I made a double batch. One for us and one for a friend who just came back from the hospital after finding out her 12yr old has diabetes.     I loved, I'm in love with chicken parmesan. But I was the only one that liked.. my kid doesn't like red sauce and my husband thought the chicken was not cooked enough and the croutons were a little burned. Oh well can't make everybody happy. Thanks for sharing I loved. - 10/17/12

    This worked really well (used Biggest Loser Marinara Sauce recipe).

    Chicken was cooked through and moist, croutons worked well and cheese etc.

    I do think I'll use some extra sauce next time though.

    This was really fabulous! I used a whole jar of marinara sauce and didn't quite use all 12 oz of cheese. The chicken was very juicy and the flavor was wonderful.     This was awesome!! Came out of the oven just as the Giants won the World Series! I added diced serrano peppers and yellow onion with the garlic and then topped the chicken with some mushrooms before adding the sauce. Great recipe! - 11/1/10
