Number of Servings: 12

Ingredients

    1 small apple, cored
    1 c dates
    1/2 c cooked quinoa
    1/4 c almonds
    1/4 c flaxseed
    1/4 c hemp protein (or your favorite protein powder)
    2 t cinnamon
    1/2 t nutmeg

Directions

In a food processor, process all ingredients until desired texture is reached. If you prefer a uniformly smooth bar, process longer. If you would rather a bar with more crunch and texture, blend for less time.

Remove mixture from processor and either shape into balls or a brick. To roll into balls, simply pinch off a desired amount and roll between your hands. To roll into a brick, which you can cut into bars, places mixture on plastic wrap and flatten, covering with another layer of plastic wrap. Use a rolling pin to roll mixture to the desired thickness, then cut into bars.

Makes 12 1 3/4 ounce bars.

    Because it was mentioned that this recipe might be too moist I added a small amount of oat bran and it came out great. Delicious! My husband loves these. - 3/14/11

    as all have said... very soft. I made them into balls and then rolled them in chopped dried coconut. Still squishy, but not sticky anymore. My first grader LOVES them! He thinks they're candy because I used chocolate hemp protein powder. So glad I can use up the gross undrinkable hemp powder now! - 9/13/11

    Sorry. Tried to dry them out a little, tried them with some cocoa and crushed walnuts to thicken them up. Even put one in the fridge. Next I'll try some coconut. Maybe I went wrong with the hemp protein. Ok, retried with protein powder...better...son loves them - 1/23/11

    While I didn't have the Protein Powder, I opted to use equal amount of Egg White, I tried baking them for 10 minutes and still too soft to do anything but Balls. Taste great though;) - 3/14/11

    I stayed with a very small apple and also cooked the quinoa dryer and this turned out moist but not too soft. If it gets too soft add a bit of bran. Very good and healthy. - 9/6/20

    Tried these with sprouted quinoa and didn't cook it pretty much everything was raw. The Hemp protein powder was a vanilla flavor from TJ's not sure if it was raw but it was pretty good. Might tweak it a lil by adding cranberries and cut back on the dates. - 3/8/11

    I haven't tried yet, but I'm betting that the flaxseed should be ground, so it acts like a binder, that might help with the moisture content. Looking forward to a test drive on this recipe - yummmm - 3/7/11

    I just saw these and they sound intriguing. Sounds like it will be rather wet, judging by the comments that some have made. Wonder if a bit of dehydrating will help (which is done frequently in vegan style bars.). For @Legalgrl perhaps adding peanut or almond butters will add to protein count? - 3/7/11

    Having difficulty with the recipe. It will not dry out enough to make a bar or ball. I used Whey protein instead of Hemp and also used currants instead of dates. Did the substitutions make that much of a difference? or maybe, submitter can add instructions for curing? - 1/25/11
