Ingredients

    16 oz spaghetti or linguine (Barilla Plus)
    12 oz shrimp
    8 oz neufchatel cheese
    1/2 cup Parmesan cheese, grated
    5 cloves Garlic
    1/4 cup chopped onion
    1 cup chicken broth

Directions

Cook pasta as directed and drain. Heat skillet with 1 tbsp olive oil, add garlic, onion, and shrimp. Stir fry until shrimp are opaque. Add cream cheese and chicken broth, stir while cooking 3-4 minutes. Once cream cheese is melted and well blended, add parmesan. Add to pasta, mix well and serve.

    Had this for dinner tonight, husban said, it would have been better with rice. I liked it, son loved it. He said ,that it was the only time the pasta was better than the shrimp. I will make it again, maybe with rice one time. Vi - 6/6/09
