Ingredients

3 Chicken breasts diced small
4 Tbsp olive oil
5 cardamom pods
2 onions chopped finely
2 tsp fresh ginger finely chopped
2 tsp garlic, chopped
1 tsp cumin powder
1 tsp coriander powder
1 tsp turmeric powder
1 Tbsp chili
1 tsp garam masala
2 tbsp tomato puree
Salt to taste
Coriander to garnish
Directions
Put the oil into a pan over a medium heat. When hot, add the cardamom pods. Add the onions and cook while stirring, until brown. Add the spices , garlic, cumin, coriander, turmeric, garam masala and chili and stir. Add the remaining ingredients. Add the tomato and tomato puree and stir until thoroughly combined. Pour in the water and bring to a gentle simmer, stirring constantly. Taste the sauce and season with salt.
Add the chicken cubes and mix well into the masala. Simmer for 10-12 minutes, until the chicken is cooked and tender. Garnish and serve .

Hello,
Sorry to reply so late.. Garam Masala is a blend of spices you can get from Indian Shops or from Sainsbury or Asda.
You need:
Coriander seeds, cummin seeds, few cloves, cardamon, cinammun stick
The bulk is Coriander seeds, and quarter of that is cummin seeds, rest is only small qty. Grind

This was very very good! We both enjoyed the different spices (and therefore minimal need of salt, though we did use more than a dash). I also used 1 t. dried chillis (perfect heat, maybe too much for most), 2/3 c. water, 1.5 diced tomotoes (no paste or canned tomatoes), and served over brown rice - 5/23/07

Even without the amount of tomato & liquid it turned out great for me. I used 2 large fresh tomatoes finely chopped, I cup of tomato sauce & 1 cup of fat free chicken stock. I like mine spicy, so, I also added 1 finely diced Habanero pepper.
I serve it over Basmati rice, and 1/4 cup of raisins. - 6/25/09

I am so glad to see Indian food on here I am cajun and my husband is Indian and we love cooking this and biryani. Make sure you cook the onion well in the oil with the garlic and other spices it really brings a flavor lime juice works wonders too. Should try the pav bhaji too it is delicious. - 3/30/09

This is excellent, authentic, and quality.
I used 1t dried chili (plenty hot! probably too hot for many), 2/3c water, small can tomatoes, and just a dash of sea salt. I served with cauli-rice.

One of the doctor's I work with is from India and gave me some fresh garam masala, so I am always looking for recipes. So far all have been delicious! Since I am vegetarian, I am trading the chicken for Seitan and making a paste of the spices and oil, and sauteeing it first to absorb the flavors. - 9/26/09

This was on the bland side so I added extra cumin, coriander and mild red chile. I also accidently bit into cardamon pod so next time I will use powdered cardamon instead. I used a 14 oz can of Hunt's diced tomatoes and almost 2 cups of water, and it tasted sour so added Splenda. Used only 1 T oil. - 9/17/09
