Introduction

Number of Servings: 12

Ingredients

    1 cup all-purpose flour
    1/2 cup whole wheat flour
    2 tsp baking powder
    1/8 tsp salt
    1/2 cup sugar
    1/2 cup nonfat yogurt
    1/4 cup skim milk
    1/4 cup applesauce
    2 egg whites,lightly beaten
    2/3 cup sliced strawberries, mashed slightly

Directions

Preheat oven to 350.
Combine first five ingredients in a large bowl; mix well. Combine yogurt, milk, applesauce and egg whites. Add to dry ingredients. Stir until moistened. Fold in mashed strawberries.
Spray 12 muffin tins with nonstick spray. Add batter. Bake for 25-30 minutes. Cool at least 10 minutes. Serve with powdered sugar on top if desired.

    oh wow, i had to check a few times to make sure it really only said 1/2 tsp sugar versus 1/2 cup! what a great snack, low in sugar... i might even make them again tomorrow, this time with some dark chocolate pieces in there :) - 6/8/09

    that is supposed to be 1/2 cup sugar - that's what I calculated the recipe with - depending on the sweetness of the strawberries though you can probably vary it - the recipe i started with had a flavored yogurt. Dark chocolate sounds yummy.

    I tried this one with a few modifications, I used low fat strawberry yogurt, since I had it on hand and added some mashed bananas along with the strawberries. They turned out good.The texture is a little different than most muffins, but still tasty! - 9/2/09

    These came out well. I veganized the recipe with soy milk and yogurt and egg replacer and the proportions still worked out. Even with frozen strawberries, they're great. - 8/7/09

    Glad you like them - never had anyone comment on a recipe before:) I'm always searching for well-balanced nutrititious tasty muffins because I have a bed and breakfast and traditional ones put calories on me (LOL)

    Delicious! Used light brown sugar instead of white sugar and added a little bit of cinnamon and vanilla. Also used plain almond milk instead of skim milk. - 3/3/13

    :( I didn't have good results - the recipe seems to need more liquid or perhaps fat content. I used paper liners and they stuck like crazy. The batter was goo-ey going in. I used brown sugar and baked them for 30 minutes. I was disappointed with MY results. - 5/19/10
