Ingredients

    6 lean center-cut pork chops, 1/2" thick

    1 egg white

    1 cup evaporated skim milk

    3/4 cup cornflake crumbs

    1/4 cup fine dry bread crumbs

    4 teaspoons paprika

    2 teaspoons oregano

    3/4 teaspoon chili powder

    1/2 teaspoon garlic powder

    1/2 teaspoon black pepper

    1/8 teaspoon cayenne pepper

    1/8 teaspoon dry mustard

    1/2 teaspoon salt

    as needed nonstick spray coating



Directions

1. Trim all fat from chops.

2. Beat egg white with evaporated skim milk. Place chops in milk mixture and let stand for 5 minutes, turning chops once.

3. Meanwhile, mix together cornflake crumbs, bread crumbs, spices, and salt.

4. Spray a 9xl3-inch baking pan with nonstick spray coating.

5. Remove chops from milk mixture. Coat thoroughly with crumb mixture.

6. Place chops in pan and bake in 375º F oven for 20 minutes. Turn chops and bake 15 minutes longer or till no pink remains.

Yield: 6 servings--Serving Size: 1 pork chop (approx 4 oz)

    These were moist with great flavor. However, when I added up the nutritional info for myself, it came out to over 300 calories per chop instead of 195. Just FYI. Still a great recipe. - 1/14/09

    To cut down on the calories even more, instead of coating the meat on both sides, I only do one. The spices make the meat super flavorful even that way! - 5/10/09

    Hate to say it,but the calories are wrong. Iget 292 and that is using 3/4 cornflakes before "crumbing"them. Take a look at the ingredient detail. - 12/4/08

    I also got about 300 in the calories when adding every thing. I was able to lower some of those calories by exchanging the corn flakes for ground up granola. It drops it to about 240 per serving. - 6/22/09

    These turned out very moist and were delicious. I was concerned with the spiciness and did smaller amounts of the chili powder, paprika and cayenne. They turned out great, with just enough "kick" in it for me. My husband liked these as well. I plan to make these again. - 12/8/08

    I thought that this recipe was absolutely delishious! My only suggestion would be holding the salt... with all of the seasonings, it does not need salt (mine were too salty)... you can always add it at the end if you feel there isn't enough. - 1/7/10
