Introduction

Ingredients

    1 lb lean ground beef or turkey
    1 c. brown rice, cooked
    1 egg
    3/4 c. greek yogurt
    1/2 c. chopped onion
    1/2 c. chopped celery
    1/2 c. choppped bell pepper, any color
    1 tsp salt
    1/4 tsp pepper
    1 tsp basil
    1 tsp oregano

Directions

1. Preheat oven to 350. Spray a loaf pan with cooking spray and set aside.

2. Combine all ingredients by hand in a large bowl. Place in loaf pan and bake for 1 hour. Let sit 10 min. before cutting.

    OMG this was incredible. I did substitute low fat plain yogurt for the greek yogurt but I will definitely make this again. Husband loved it as well. Served with mashed potatoes made with chicken broth and yogurt, creamy and tasty and healthy. - 8/20/09

    This is good. Although brown rice has a strong flavor, it adds fullness and volume to the loaf without overpowering the flavor of the meat. We really liked it.

    I spread it out in a 8x10 pan and baked at 400. It was done in under 25 minutes. I also put tomato soup on top--good over potatoes.

    This had a very good taste to it. The brown rice sure fills you up. I added a tbsp of Heinz low carb reduced sugar ketchup on top for some extra flavor! - 11/4/09

    I loved the recipe, however, I question the sodium info. I Googled the amount of sodium in 1 tsp of salt and came up with 2300 mg. Six servings results in 383 mg/serving (assuming no sodium added by anything else.) If I am wrong please tell me. I just want to be accurate when I track it. - 9/6/11

    NEW FAV!!! I made a huge mistake when I forgot to add the yogurt, eggs, and spices BUT it was still delicious, moist, and stayed together. (I added some chopped garlic as some others suggested) I can't wait to try it again with all of the ingriedients! - 1/26/11

    This was a good recipe, just kind of bland for my taste. I used turkey instead of hamburger, so maybe that was the problem. That said, I will be making this again, I'll try putting a couple pieces of bacon on top, and maybe a few more spices. It is very filling. - 1/10/18

    We used vanilla greek yogurt with choc chunks by accident (gramps). Used orange bell pepper instead of celery along with the green pepper too... we also added sausage with the beef... next time using turkey instead of beef.

    Turned out great!!!

    I prepared 2 of these for a church pitch-in today, one w/turkey and one w/hamburger. They were very well received. I did add a ketchup/brown sugar/tomato paste sauce to the top, and I also added some cheddar cheese to the top of the hamburger one. I would make it again but maybe modify it a bit. - 2/10/13

    My famIly loves this! I saute the veg and "blenderize" with the rice, yogurt & eggs before adding to the meat. I double the recipe and bake in a 9"x13" pan. I like to add some heat with a hot pepper or two as well. Delicious on toast! - 5/30/12

    My whole family loved this. I added a ketchup/brown sugar glaze to go on top. The only thing I would do differently is saute the veggies first because they were a little too crunchy in the loaf. At first my husband was skeptical out the yogurt - but he actually liked it! - 5/31/11

    I liked this recipe, my kids did not! The only think I think I would change is precooking my veggies, because even after an hour in the oven they were still a little crisp.
    Also I question the calorie content. I ran it through the recipe calculator on this site and got about 100 more calories.

    Brown rice makes a poor binder. It tasted ok, but it wasn't a loaf that you could get a good slice out of. It was more like baked and crumbled ground beef with rice and veggies in it. - 3/16/11

    Did not enjoy this recpe. I made it without adding any extra seasoning and regretted it. Very bland and boring. Might be OK if you added the usual brown sugar/ketchup sauce on top. I'm stuck with tons of leftovers, so I will make up a sauce to give it some flavour when I reheat - 2/24/11

    I made this using hamburger, plain fat free yogart, and Mrs. Dash Southwest Chipolte Seasoning and even my family liked this. I put a drizzel of ketchup on top when baking. I will be making this again. Yummy - 8/19/10

    Yummy. I substituted cooked kale for the peppers, sauteed garlic with the onions & celery and used wild rice instead of brown rice. Baked in a shallow pan formed like a loaf so it doesn't stew in the juices that seep out during cooking. Delicious served with dijon mustard. - 7/17/10

    Delicioso! I had it for dinner tonight and it was very good. I also have the "eat-clean cookbook" I didn't had enough time to make the chesse with the yogurt as suggested in the book so I drain the yougurt by placing it on a colander with a paper towel for 20min You left the tamari out, I did use it - 4/9/10

    Pretty good base turkey meatloaf. With such a low calorie count for the recipe, this could probably be made into a very decadent dish. I added some low-fat cheddar and a mustard/balsamic/ketchup glaze on top. - 12/15/09

    WOW! This is a winner! I've always made meatloaf with catsup & oatmeal. This is replacing my meatloaf recipe! It was so good, that I scarfed it down, and the kids were screaming, "YUM!!" while gulping it down. This is something that is going on our weekly menu. Thanks! - 9/6/09
