Introduction

Healthy and yummy all in one! Healthy and yummy all in one!
Number of Servings: 1

Ingredients

    1/4 cup chopped yellow onion
    1/4 cup chopped red bell pepper
    1/2 cup chopped baby spinach
    1- 10" Brown Rice tortilla (heated according to directions)
    1/2 TBSP Extra Virgin Olive Oil (for cooking)
    Pace Picante Sauce (for dipping)

Directions

In a pan on medium high heat, add olive oil, onion, red pepper. Saute for 3 minutes. Spoon into flat tortilla. Add spinach on top of veggies. Roll up and enjoy! Dip in Pace Picante sauce for an extra kick!

*Makes 1 wrap.

    This recipe sounds delicious! I'm going to try it out. It's hard finding good & simple vegetarian recipes! I would add some black beans or pinto beans for extra protein. - 5/5/07
