You really don't get the concept of low carb, do you?
This recipe sounds delicious! I'm going to try it out. It's hard finding good & simple vegetarian recipes! I would add some black beans or pinto beans for extra protein.
This sounds gorgeous - just my kind of thing.
I'd add a teaspoon of nonfat sour cream just to bring that dairy edge in, too.
