Ingredients

    Ingredients:
    1 2/3 cup Whole Wheat Flour (very well sifted)
    1 tsp Baking Powder
    1/4 tsp Salt
    1 cup Banana, mashed (2 large)
    1/3 cup Fat Free Sour Cream
    1 tsp Vanilla Extract
    1/2 cup Canola Oil
    1 cup Splenda No Calorie Sweetener
    2 large eggs
    1/2 tsp Baking Soda

    *optional - Vanilla frosting or Greek yogurt plus berries for garnish (*NOT included in nutritional content)

    Yields 18 cupcakes

Directions

Preheat to 350. Line 18 cups of baking pan with cupcake liners.

Combine flour, baking powder, baking soda and salt in bowl.

In another bowl, blend bananas, sour cream, and vanilla. Beat in oil and Splenda. Add eggs one at a time, beating well after each.

Alternately add flour and banana mixtures, ending with flour.

Fill baking cups with batter. Bake 15-20 minutes. Cool on wire rack.

Optional: Frost with a small dollop of your favorite frosting and top with fresh berries (not included in nutritional value).

    @KYLAR_STERN: Yes, your substitutions should work, though they'll be more dense. The instructions should read: Whisk the oil, applesauce, sweetener and eggs together in a large bowl. Stir the bananas and yogurt together in another. Mix 1/3 dry ingredients then 1/2 yogurt into egg mixture (repeat). - 5/18/16

    The directions are slightly confusing where it says to alternately add flour mixture and egg mixture. If you follow the directions as written, you can only add flour mixture "to" the egg mixture. Mine ended up fairly dry and almost chewy. - 7/7/14

    Someone smarter than I at baking, would replacing the 1/2 cup canola oil with 1/4 cup applesauce and 1/4 cup olive oil or butter work out here? And also sour cream for plain Greek Yogurt? - 5/12/14

    Still not a fan of substitute sweeteners - I'd rather use real sugar and eat less of this. Subbed nonfat greek yogurt for sour cream - works just as well seemingly and it's what I had on hand lol - 5/14/21

    I'm glad this was the recipe of the day. Perfect timing as I have 2 over ripe bananas and it's a cool, rainy morning. Perfect day to use the oven! I'm using greek yogurt in place if the sour cream. Hope they're yummy! - 7/3/16

    I haven't tried it as yet, but did save it to my favorite recipes so I'll have easy access to it. I think I would replace the oil with half butter or olive oil and half applesauce, as I do most of my recipes that way. Also would probably use FF Cool Whip as a topping. - 7/3/14
