Ingredients

    Approx. 2 LB pork tenderloin, 1 whole onion, 2 tbsp olive oil, juice from 1 grapefruit, 1 orange and 1 lime, 2 tbsp of salsa and Goya seasoning.

Directions

Trim tenderloin and cut into 4 inch long chunks. Season and brown in a skillet over olive oil and 1/4 cup sliced onion. When browned, squeeze citrus juices into a slow cooker, also add salsa. Now insert Tenderloin on top of juices (turn to coat) and chop the remainder of the onion and put on top of tenderloin. Cook on low for 7-8 hours or on high for 5-6 hours. (Optional, sqeeze another lime over the tenderloin after onions are added)

**NOTE** goes well with 1/2 cup of black or kidney beans, Mission Low carb wheat tortilla and 1/2 of sliced avocado. (light sour cream and salsa optional)

Can be eaten for lunch or dinner

    Incredible!
    I made this for dinner and it was tasty. When it was almost done, I used two forks to pull it apart like pulled pork. I had my serving with a tortilla and a spoon of low fat sour cream. This will be my recipe of choice for pork tenderloin. Bonus: the leftovers will be my lunch tomorrow. - 12/7/10
