Number of Servings: 4

Ingredients

    2 yellow squash
    1/4 C dry bread crumbs
    2 T onions, chopped
    2 T grated parmesan cheese
    1/4 tsp salt
    2 cloves garlic
    1 T olive oil, light

Directions

Heat oven to 375. Heat olive oil in medium pan. Wash and cut squash in half lengthwise. Using spoon, scrape out centers and chop together with onion. Add to pan. Stir in bread crumbs, salt, garlic, and parmesan cheese. Stuff squash and transfer to baking sheet. Cook for 20 minutes. Sprinkle with paprika, if desired.

    I thought this was really good and I usually don't like squash like veggies. I think when i make it again, I'll add some parsley and some pepper to the actual shell of the squash, but I'll definitely repeat this recipe. - 7/1/12

    This was good. I made it with zucchini as some of the others suggested. The stuffing was amazing! I only wish I would have hollowed out the zucchini a little more to get the garlic and onion flavors spread out instead of just concentrated in the small amount of stuffing I made. - 7/29/10
