Ingredients

    1/2 c. whole wheat couscous
    1/2 c. boiling water
    1 c. diced plum tomatoes, peeled & seeded
    1/2 c. diced cucumber, seeded
    1/4 c. finely chopped red onion
    1 tbsp. fresh mint, chopped
    1 tbsp. fresh oregano, chopped
    2 tbsp. red wine vinegar
    4 tsp. extra virgin olive oil
    1/4 tsp. salt
    1/4 tsp. freshly gound pepper
    1/2 c. feta cheese, crumbled

Directions

Combine couscous and water in large mixing bowl and let sit until water is absorbed. Combine vinegar, s&p and oil. When couscous is cool, fluff with a fork and add remaining ingredients and dressing. Toss to combine. Serve at room temperature or cover and refrigerate for up to 24 hrs. (It is better fresh though)

    I usually make tabouli which calls for fresh parsley. I will try this but substitute parsley for the mint and use chopped scallions since I don't usually have red onions on hand. And a good squeeze of fresh lemon juice. Great summer recipe to use with the fresh garden tomatoes and cucumbers! - 7/26/09

    Really love this. I use it both as side dish for fish and also as salad to take with me to work. I even manage to do it without boiling water...just fresh lemon juice and water and rest of
    ingredients. Other times i replace feta cheese with our own Maltese Goat's Pepper Cheeslets (Gbejniet)

    A few changes for us: added a can of black beans (drained), zucchini chopped (instead of cucumber), red bell pepper & shredded carrot, and cilantro instead of mint & oregano. Any veggies seem to work! Yum! - 8/24/11

    This was really, really good. I added black olives and two cloves of garlic. The only thing I would do differently is serve it as soon as I put the dressing on. I put the dressing on too early and the couscous was a little dry. My husband had second and third helpings! - 4/29/10
