Ingredients

    1 lb hamburger
    Onion – chopped
    4 cups cooked brown (I make 1.5 C brown rice w/ 3 C water)
    1 can Black Beans, drained
    2 cans diced tomatoes
    2T chili powder
    1 T cumin

Directions

Brown the hamburger and onions (drain if needed), add cooked rice, beans and tomatoes, add the spices. May have to add a small amount of water if needed.

I like to serve it topped with cheese, green onions and sour cream and have multi-grain tortilla chips on the side. (Not included in calorie count)

The original recipe calls for a can of green chilies, but I leave that out. I think it would be good if topped with homemade fresh salsa.

Makes approximately 12 1 cup servings

Great recipe! I added in the green chilies and only put in one can of petite diced tomatoes. I also used a packet of taco seasoning in place of the cumin and chili powder. Served with baked torilla chips. Thanks! - 1/26/10

I added a 4 oz. can of green chilies, substituted refried beans for the black, and used white rice. Drawbacks are can sizes are not specified and it won't fit in a skillet. Make in a wok or Dutch oven. Loved it on a tostada shell with lettuce, cheese, sour cream, and Zaaschila guacamole and Serrano. - 7/20/14

This was good, but tasted more like chili to me. So next time I am going to put in taco seasoning. We also put salsa, cheese and sour cream on top. Everyone liked it, so I will be making again. - 4/30/14

Turned out very well. I cooked the ground beef on the grill and crumbled it in. Served up the mixture in a soft tortilla with cheddar, sour cream, avocado, and salsa. Very tasty. - 8/3/12

Very Tasty and filling. I tweaked it a bit, I used tomatoes with Jalpenos and Salsa instead of the canned tomotes and cute down to 1 tbs of chili powder. My husband thought it could have used both tablespoons, but it had enough heat for me! Will serve again with lettuce - 3/10/11

I tried it with rotel in it which to me was a little to much. I think next time I will follow the recipe exactly or at least cut back on the heat. - 2/21/11

Easy to make and my 3 y/o commented that it is her favorite! I didn't have chili powder or cumin, so I subbed crushed red pepper. I think it would be tastey with corn too. - 7/27/10
