Ingredients

1 c whole wheat flour
1/2 c oat bran
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 tbsp cinnamon
1/2 c packed brown sugar
1/2 apple sauce
2 eggs, lightly beaten
2 ripe bananas, mashed
Directions
Preheat oven to 350, & spray loaf pan with cooking spray.
In a bowl, combine flour, oat bran, salt, baking powder, baking soda, and cinnamon. Set aside.
In a mixer bowl, combine brown sugar and apple sauce and beat on low speed until blended and mostly dissolved. Add in eggs and mix until combined. Add bananas and mix until combined. While the mixer is running, add in flour mixture slowly, until all is just combined.
Pour into loaf pan and bake for 40-50 min. or until toothpick inserted in the middle comes out clean.
Let cool on counter 10 minutes before slicing. Enjoy!

I am not a huge fan of banana nut bread but my husband is, so I make it for him a few times per year. I tried a small slice while it was warm and it was absolutely delightful and super moist. My husband loved it too, not knowing it was low in fat. Great recipe! I used unsweetened applesauce. - 9/27/09

I just made this and it is really good. I sprinkled a little bit of sugar and cinnamon over the top of the mixture before baking. It turned into a crisp layer which melts in your mouth. I'm hoping the kids get home from school soon to demolish this or else I will be tempted to have another piece! - 9/23/10

These are a favorite! Made 12 muffins, baked 20-25 minutes. Used Swerve sugar replacement and reduced to 1/3 cup as I was sure my banana and applesauce were very good. (homemade no sugar applesauce), egg beaters,Added pinches -ginger, allspice, mace, cardamon, 1 tsp.cinnamon. Great! 77 calories - 10/18/17

excellent i have made it twice this week due to rave reviews, even my 9 yr old daughter who does not like banana bread ate it up! the only change i made with it that would add a few xtra calories was i sprinkled the top with a few choc chips and raw sugar and used wheat bran instead of oat <3 it! - 1/16/11

I entered a recipe adapted from this one. I made mini-muffins us pretty much this same recipe, except adding nutmeg, vanilla, raisins, and walnuts. Nutritional content is completely different with the mini-muffins, and baking time is greatly reduced. This is a terrific recipe; everyone Loves 'em! - 7/11/10
