Introduction

Banana bread, madeover with oat bran and love! Banana bread, madeover with oat bran and love!
Number of Servings: 10

Ingredients

    1 c whole wheat flour
    1/2 c oat bran
    1/4 tsp salt
    1/2 tsp baking soda
    1/4 tsp baking powder
    1 tbsp cinnamon
    1/2 c packed brown sugar
    1/2 apple sauce
    2 eggs, lightly beaten
    2 ripe bananas, mashed

Directions

Preheat oven to 350, & spray loaf pan with cooking spray.
In a bowl, combine flour, oat bran, salt, baking powder, baking soda, and cinnamon. Set aside.
In a mixer bowl, combine brown sugar and apple sauce and beat on low speed until blended and mostly dissolved. Add in eggs and mix until combined. Add bananas and mix until combined. While the mixer is running, add in flour mixture slowly, until all is just combined.
Pour into loaf pan and bake for 40-50 min. or until toothpick inserted in the middle comes out clean.
Let cool on counter 10 minutes before slicing. Enjoy!

    I made this, in cupcake form. I didn't have any oatbran, so used a multi grain bran cereal that I did have on hand. I also added approx 1/3 cup of natural, chopped, dates. With the dates added, and made into cupcakes, still 125 calories per serving. YUM! - 9/7/07

    I am not a huge fan of banana nut bread but my husband is, so I make it for him a few times per year. I tried a small slice while it was warm and it was absolutely delightful and super moist. My husband loved it too, not knowing it was low in fat. Great recipe! I used unsweetened applesauce. - 9/27/09

    Just tried this banan bread. OMG. It is excellent. The only thing I changed was adding walnuts due to personal preference. Also, next time I may turn down the oven a bit, it was really dark and crispy when baked but still good. - 4/3/09

    I'm always looking for something to do with my banana that I don't quiet get to. I used brown sugar splenda substitute for the sugar. It's a little on the sweet side, but I might have not calculated for the substitutions. Overall it's a nice hearty bread. - 10/19/09

    I'm not really a banana bread fan, but this recipe isn't bad - nice & moist and a good flavor, especially considering it's low fat & low cal and healthy. I think next time I'll add more spices - like those in the Pampered Chef cinnamon extra. - 5/24/08

    This is my new favorite muffin recipe! I didn't have any bananas ripe enough so I alterred it to make cinnamon walnut chocolate chip muffins! They were perfect. I love to add oat bran in wherever I can and the texture and taste of these is great! Can't wait to try it with other additions. - 12/9/07

    I used 1/3 cup of honey instead of sugar as I have run out of brown sugar. I also had only 100ml of apple sauce not 1/2 a cup. I used wheat bran not oat bran as that is also what I have on hand. The calorie count is basically the same (4 calorie per slice difference). Very good. - 10/13/10

    I just made this and it is really good. I sprinkled a little bit of sugar and cinnamon over the top of the mixture before baking. It turned into a crisp layer which melts in your mouth. I'm hoping the kids get home from school soon to demolish this or else I will be tempted to have another piece! - 9/23/10

    I made this recipe as a dozen muffins instead. I adjusted cooking time to 20 minutes & they were fabulous. Next time I'll toast a few walnuts & sprinkle them on top to get the real banana nut bread taste. Wonderful either way! - 8/6/07

    These are a favorite! Made 12 muffins, baked 20-25 minutes. Used Swerve sugar replacement and reduced to 1/3 cup as I was sure my banana and applesauce were very good. (homemade no sugar applesauce), egg beaters,Added pinches -ginger, allspice, mace, cardamon, 1 tsp.cinnamon. Great! 77 calories - 10/18/17

    I made this tonight and it turned out great. I baked it for 35 minutes and that was enough. Am freezing half so we don't eat all up.     WOW!....This is healthy and very moist. I used egg beaters as some of the reviews stated. I also added 1/2 tsp pumpkin pie spice, 1/2 cup chopped pecans, 1/4 cup or raisns and all I had was wheat bran not oat and it is still terrific. I used to small loaf pans so I can freeze one. - 4/16/11

    Very good. I tried it with stevia leaves, put in walnuts, 1 whole egg and 2 egg whites, flaxseeds, wheat germ and wheat bran instead of oat bran. Will make it again.

    I entered a recipe adapted from this one. I made mini-muffins us pretty much this same recipe, except adding nutmeg, vanilla, raisins, and walnuts. Nutritional content is completely different with the mini-muffins, and baking time is greatly reduced. This is a terrific recipe; everyone Loves 'em! - 7/11/10
