I was looking for a tasty Lentil and Rice salad to add as I was challenged by my dietitian to add more fiber to my diet.

I used black rice and red lentils (which can be hard to find and/or expensive) but should be good with brown rice and whatever lentils you have.

This salad is a one bowler; throw all ingredients into one bowl & toss. You do need 2 cups cooked rice.
A simple dressing of sherry vinegar, Dijon mustard and paprika flavor this rice and lentil salad. It's a great way to use up leftovers.
This is adapted from a Rick Bayless recipe. I serve it on a bed of spinach for a hearty lunch (spinach not included in the calculations). The salad is spicy and tangy. Yum!
