Number of Servings: 1


    1 cup lentils, already cooked (1/2 c. dry)
    1 cup brown rice, already cooked (ditto)
    1 c. frozen green peas
    19 olives, chopped (Kalamata or green best)
    2 ripe tomatoes, chopped
    3 T. wine or cider vinegar
    3 T. olive oil
    1 small onion, chopped
    3 T. parsley, chopped
    1 clove garlic minced (or 1 t.)
    1/2 t. dried oregano or 1/2 T. fresh
    black pepper


Combine ingredients (best to combine basic ingredients to tomatoes on the list, and dressing ingredients below that, separately). Toss and chill. Serve on fresh lettuce.
