Introduction

Number of Servings: 6

Ingredients

    1/3 c brown rice
    1/3 c pearl barley
    1/3 c brown or green lentils
    1/2 c crumbled feta
    1/2 c chopped fresh parsley
    1/4 c chopped dates (can sub figs or apricots)
    1-2 green onions, chopped
    1/2 c chopped walnuts, toasted
    2 T olive oil
    3 T lemon juice

Directions

1. Bring a medium pot of water to a boil and add brown rice, barley and lentils; reduce heat and simmer 40-45 minutes, until all three are tender.
2. Drain well. If serving cold, rinse with cool water.
Add the feta, parsley, dates, green onions and walnuts. Drizzle with oil and vinegar; toss to combine. Serve immediately or refrigerate until neede.
