Ingredients

1. Lentils, .5 cup
2. Brown rice (uncooked), 0.5 cup
3. Vegetable Broth, 2 cup
4. Olive Oil, 1 tbsp
5. Garlic, 2 clove
6. Lime Juice, 1 lime yields
7. Grey Poupon Dijon Mustard, 2 tsp
8. green onion (1 stalk), 3 serving
9. Red Ripe Tomatoes, 2 medium whole (2-3/5" dia)
10. Parsley, raw 1 Tablespoon, 1 tbsp
11. Red wine vinegar, 2 Tbsp.
Directions
1. combine rice and lentils along with stock or cooking liquid in medium saucepan and cook until all water is absorbed, about 40 minutes. You can use the oven method for cooking these too. Just place all ingredients in a covered casserole dish and bake at 350 degrees for 40 minutes.
2. Remove cooked rice and lentils from heat. Place into decorative salad bowl and fluff with a fork. Let cool.
3. Prepare dressing by combining olive oil, garlic, lime juice, red wine vinegar, mustard, salt and pepper in small mason jar. Put a lid on and shake well. Otherwise whisk well in a small bowl.
4. Add chopped green onion, tomatoes and parsley to cooled rice and lentils.
5. Add dressing. Toss to combine. Serve chilled.
