Ingredients

    8 oz. beluga lentils, cooked
    2 cups brown rice, cooked
    2 oz. semi-soft goat cheese, crumbled
    1 cup cherry tomatoes, quartered
    1/4 tsp. kosher salt
    1/4 tsp. salt substitute
    1 Tbsp. balsamic vinegar
    1 Tbsp. fresh rosemary, chopped

Directions

In a bowl, combine lentils, rice, cheese and tomatoes.
In a second bowl, whisk together the rosemary, salt, salt substitute and balsamic vinegar. Pour over salad, stir, and allow to marinate in the fridge for 30-45 minutes before serving.

Serves 4.
