Introduction

This salad is a one bowler; throw all ingredients into one bowl & toss. You do need 2 cups cooked rice. This salad is a one bowler; throw all ingredients into one bowl & toss. You do need 2 cups cooked rice.

Ingredients

    1 Tbsp Lemon Zest
    1/4 cup Lemon Juice
    2 Tbsp Olive Oil
    1 tsp Dijon Mustard
    1/4 tsp Cinnamon
    Pinch Cayenne
    1 - 19oz (540ml) can Lentils, drained & rinsed
    2 cups Long or Short Grain Brown Rice, cooked
    1 cup Parsley, coarsely chopped
    3/4 cup Red Onion, diced
    1/2 cup Currants
    1/2 cup Dried Cranberries
    1 Tbsp Mint, finely chopped
    Whisk together lemon zest & juice, olive oil, dijon, cinnamon & cayenne.

    Add drained & rinsed Lentils; toss

    Add Rice and toss until just combined.

    Add parsley, red onion, currants, cranberries & mint. Toss until just combined.

Makes 4 - 1 1/4 cup servings
