Ingredients

    Dressing (makes 1 c, use 1/4 c for salad)
    3/4 c olive oil
    1/4 c balsamic vinegar
    1 chipotle chili (canned), chopped finely
    1 tsp oregano
    1 tsp chipotle canning liquid

    Salad:
    2/3 c lentils
    1/2 c rice, long-grain preferred
    1 Tbsp salt
    1 bag baby spinach (6 oz)
    4 oz ham, chopped
    1 cucumber, chopped
    1 red bell pepper, roasted, peeled & chopped
    1 small red onion, sliced thinly

Tips

Bayless recommends omitting the spinach if the salad needs to be transported.


Directions

Make dressing: add ingredients to jar & shake.
Roast, peel, seed & chop pepper.
Boil rice, lentils & 1 Tbsp salt in 2 Qt water for 15 min. Drain over the onions. Add to large bowl with spinach. Add ham, cucumber, red bell pepper & 1/4 c. dressing. Toss well.

Serving Size: Makes 6 servings (1 1/2 c)
