Ingredients

Directions

1. Soak red lentils in cold water for 2-3 hours, then drain.
2. Combine rice, water and salt to taste in saucepan and bring to a boil; simmer 40-50 minutes until all liquid is absorbed. Let sit till cool.
3. Cook edamame if using frozen.
4. Toss rice, edamame, lentils, walnuts and cilantro in a bowl.
5. Whisk together rice wine vinegar, lime juice, sesame and grapeseed oils (I used all sesame), soy sauce, grated fresh ginger and cayenne (optional). Toss with salad and refrigerate.

Should keep 4 days in refrigerator.
