Introduction

A very delicious variation on chicken salad. Using Dijon and honey in the dressing make the difference. It's great to make a whole batch and just eat on it all week. Ingredients

    1 Lb boneless, skinless chicken breasts
    1 cup diagonally sliced celery
    1 cup diagonally sliced green onion
    1 cup light mayonnaise
    2 TBL Dijon mustard
    2 TBL honey
    1/2 cup toasted chopped pecans
    1/2 cup craisins

Directions

Boil chicken breasts in salted water for 20 minutes. Drain and allow to cool. While chicken cooks, mix mayonnaise, Dijon, and honey and whisk until well blended. Slice celery and green onion. Cut chicken into large chunks and mix together with celery and onion. Mix chicken mixture with the mayonnaise mixture. Add pecans and craisins and toss well. Serve on lettuce or spinach leaves. This is a really good salad. Makes 6 servings.

    I loved this - but I have to disagree with the nutr info. Pecans have much more calories and fat in them then listed on the nutr info. I guess I should have plugged this in my diet diary before making and eating it for lunch. actually 288cal 18 carb 17 fat 18 prot. Also too much dressing - 9/25/12

    I absolutely love this recipe. I like to make a batch on Sunday night and take it to work all week with a whole wheat wrap and some lettuce. This recipe is also fantastic when made with almonds. - 3/4/12

    I like this recipe but the nutrition information is way off. How can you have a pound of chicken breast divided into six portions and only get 3 grams of protein. Pound of chicken is 139 grams of protein divided by 6 is at least 23 grams per serving. This just doesn't seem right. Craisins are very h - 4/20/18

    Been looking for this recipe;local grocery makes the full fat version in the deli. Prob w/theirs is the dressing:chicken ratio (would u like some chicken with your dressing?) I subbed .5C plain greek yogurt for .5C mayo. Still little too much dressing for my liking, but easy to remove some. THANKS!! - 4/4/11

    Thanks. It's funny you mention oranges. Although I haven't tried with this recipe, I was just about to enter a recipe for an old dish I used toeat like 20 years ago. I am crazy for oranges in recipes. I have a great chinese chicken salad recipe I use oranges in. I will enter that too Thanks again!
